Chicken Lettuce Wraps

If you love Asian food, raise your hand! This easy meal has been a go to of mine for 7+ years! I don’t know where the original recipe came from, but over the years I adapted it and let me tell you, it rocks. It has lived in the little yellow note pad on my phone for many years, so you’re welcome for typing it up for you.

Makes 4 Servings

INGREDIENTS

  • 1 LB ground chicken

  • 1 yellow onion, chopped

  • 1 tbsp soy sauce

  • 1/4 cup hoisin sauce

  • 1 tbsp rice wine vinegar

  • 2 tbsp minced garlic

  • 2 tsp fresh ginger

  • 3 tsp sriracha

  • 1 bunch green onions

  • 1 head of iceberg or butter lettuce

INSTRUCTIONS

  • First, prepare the sauce by combining soy sauce, hoisin, rice wine vinegar, garlic, ginger and sriracha in a bowl.

  • Next, chop up your yellow onion.

  • Heat olive oil in a pan on medium heat. Add in your chopped onion and sauté for 2-3 minutes. Add in ground chicken and stir until cooked through.

  • Turn off heat, and pour in sauce. Give it a stir and you are ready to serve in your lettuce cups and top with green onions!
