Summer Salad + Apple Cider Vinaigrette
I am so excited to share an incredibly simple and delicious salad with you guys! The dressing has the best tang, and you get all the benefits of the apple cider vinegar which is a huge plus. I have been throwing this together for lunch quite a bit, and sometimes stick to just the veggies to keep it simple. You could easily add in shrimp, salmon, or chicken and it would be delicious!
Did you know that apple cider vinegar helps kill harmful bacteria, is great for your skin, and can even help with weight loss? It has so many benefits and I love that it is a part of this salad.

This recipe calls for crumbled blue cheese, but I know there are a lot of haters out there, so you can absolutely substitute for feta or goat crumbles!
INGREDIENTS
Romaine lettuce, chopped (any type of lettuce works!)
Green Apple, cut into small pieces
Crumbled blue cheese
Avocado, sliced
APPLE CIDER VINEGAR DRESSING
1/4 cup apple cider vinegar
1/2 cup olive oil
2 tsp dijon mustard
1 tbs minced garlic
1 tsp honey
Salt + pepper to taste
INSTRUCTIONS
Add all of the salad dressing ingredients to a container with a lid.
Shake vigorously until fully combined.
Arrange the lettuce, apples, avocados, and cheese into a bowl and top with the dressing.
Toss and enjoy!
