Crispy Garlic + Herb Salmon
Love salmon? Love having dinner on the table in 30 minutes? Me too! I threw together this dinner a few nights ago with things I had in the pantry. It turned out so delicious, and I am excited to share it with you!
Makes 2 Servings
INGREDIENTS
1 LB salmon - skin on
1/4 cup panko breadcrumbs
2 tbs parmesan cheese
2 teaspoons minced garlic - or 2 garlic cloves, minced
Olive oil for drizzling
1 lemon
1/4 tsp rosemary
1/4 tsp thyme
1/4 tsp oregano
Salt + Pepper
INSTRUCTIONS
First, select a baking dish and line with foil.
Next, rinse off your salmon, and pat dry with a paper towel.
Place salmon, skin down, in the baking dish.
Drizzle about 1 tsp of olive oil on the salmon and rub it in with your fingers, or with the back of a spoon.
Next, take the minced garlic, and spread evenly on the salmon.
Add salt and pepper
In a small bowl, combine the panko breadcrumbs, parmesan cheese and all of your herbs.
Time to coat the top of the salmon with this mixture! Pack it on there, and try to spread it out as best as you can.
Squeeze the juice of half of a lemon over the salmon.
Place the baking dish in the oven and set the temperature to 400 degrees. Set a timer for 20 minutes. This is my go to way to cook salmon. Cooking it in a cold to hot over makes it perfect every single time!
When the salmon comes out of the oven, use a spatula to take it out of the pan. The skin will remain stuck to the foil. Ta-Da!
