Crispy Garlic + Herb Salmon

Love salmon? Love having dinner on the table in 30 minutes? Me too! I threw together this dinner a few nights ago with things I had in the pantry. It turned out so delicious, and I am excited to share it with you!

Makes 2 Servings

INGREDIENTS

  • 1 LB salmon - skin on

  • 1/4 cup panko breadcrumbs

  • 2 tbs parmesan cheese

  • 2 teaspoons minced garlic - or 2 garlic cloves, minced

  • Olive oil for drizzling

  • 1 lemon

  • 1/4 tsp rosemary

  • 1/4 tsp thyme

  • 1/4 tsp oregano

  • Salt + Pepper

INSTRUCTIONS

  • First, select a baking dish and line with foil.

  • Next, rinse off your salmon, and pat dry with a paper towel.

  • Place salmon, skin down, in the baking dish.

  • Drizzle about 1 tsp of olive oil on the salmon and rub it in with your fingers, or with the back of a spoon.

  • Next, take the minced garlic, and spread evenly on the salmon.

  • Add salt and pepper

  • In a small bowl, combine the panko breadcrumbs, parmesan cheese and all of your herbs.

  • Time to coat the top of the salmon with this mixture! Pack it on there, and try to spread it out as best as you can.

  • Squeeze the juice of half of a lemon over the salmon.

  • Place the baking dish in the oven and set the temperature to 400 degrees. Set a timer for 20 minutes. This is my go to way to cook salmon. Cooking it in a cold to hot over makes it perfect every single time!

  • When the salmon comes out of the oven, use a spatula to take it out of the pan. The skin will remain stuck to the foil. Ta-Da!
